Man Eats Local

Owner of In Season Local Market

Anonymous asked: How do the Kiowa eggs compare to Grant Family Farms? How much is a dozen? Any blue/green ones like Grant's??

Take Care,

I have noticed that they have a firmer white and sometimes a much oranger yolk.  Since going back to eating only from the market I started eating yolks again instead of just whites.  I am a huge fan.  I would say they are closer to duck eggs.  Super rich and are very eggy when added to recipes.  We sell them for $5.50 a dozen.  They do have some colors, maybe one or two per dozen.

Black Pepper Pasta with Spinach and Chicken Sausage Brats
If you have 20 minutes this can be on the table.
Black Pepper Linguine from Joe Bella Vito Pasta
Heritage Chicken Brats - Eastern Plains Natural Co-OP
Organic triple washed Spinach from Isabel Farms
Tomatoes with basil - MMlocal
Haystack Smoked goat Chevre
I bought the Chicken brats frozen at the market at about 5:20.  I got home and put them in luke warm water for about 15 minutes to thaw and started the water boiling.  Tossed the brats in the water for 10 minutes removed them then added pasta.  Moved the brats into a pan to seer then added spinach and tomatoes.
Used brat water to boil pasta.  Plated pasta added brats, spinach and tomatoes topped with cheese and to the table.  Huge hit with the family.

Real Eggs!  Hunt’em down in the pasture behind the haystack real eggs.  I don’t think that the photo does the color justice.
Kiowa Valley Organics pasture eggs are the real thing.  Almost closer to a duck egg than most grocery store eggs you can buy at a big box market.  The color of the yolk is nearer orange then the pale yellow most Americans are used to seeing in the bottom of their bowl.
Stop by the market a grab a dozen and let us know you read about them here and we will hook you up.
Today’s breakfast:
two Kiowa eggs
little bit of Morning Fresh Dairy’s cream
MMlocal’s High Desert Peppers
Haystack applewood smoked goat cheese

Spaghetti Pie!  Don’t let the name fool you.

The wife has a bike ride tomorrow and requested spaghetti and channeling the pre-race dinner of one of our more successful biking friends spaghetti pie it was.

I haven’t been big into giving cooking suggestion but if you can mix your ground meats do it!  Let me say that again.  DO IT!  The other night it was pork/bison burgers and tonight we went for the ground Heritage chicken and ground Italian pork.  Like I tell everyone that comes into the store, if you start with amazing ingredients no matter what you do your food is gonna be better than average!

  • Spinach Angle Hair - Joe Bella Vito
  • Ground Heritage Chicken - Eastern Plains Natural Co-Op
  • Ground Italian Pork - John Long
  • Mixed Mushrooms from Hazel Dell
  • Hydroponic Spinach
  • Combo of Tomatoes w Basil & Tomatoes with Rosemary from MMlocal
  • Semi-soft Goat Cheese with herbs from Mini Moos and Kids Too
  • Baguette from Vincenza’s

Cook pasta.  Brown ground meat.  Saute mushrooms and spinach.  Add tomatoes back to ground meat.  In a 9x9 pan add a layer of angle hair, then the ground meat and toms top with mushrooms and spinach and add a little Goat Cheese.  Slide it in the over for about 10 minutes and you are all set.

Breakfast of the Mediocre
I like to ride my bike a lot.  I mean I like to ride my bike very much and I like to actually be on my bike often.
Breakfast started with a nice little piece of toasted ciabatta from Vincenza’s on 44th and Wadsworth and a little Colorado Mountain Jam.
Then things depart from the norm a bit.
This cycling season I have decided to use nutritional products from Honey Stinger out of Steamboat.  I like there products for their taste, consistency and the times I have come across the owners they seemed like good people.
They also seem to try to make as many people as happy as possible.
Many of their products are
Gluten Free
Vegan Friendly
Kosher Certified
Take a look at their website  http://www.honeystinger.com/index-2.html for nutritional info.

A very botanical lunch.  The Denver Botanical Gardens is an amazing place.  Not extremely tranquil about 11:30 on a bluebird Friday but the kiddos had an amazing time.

Not much market to be had here.  We did plow down a box of 34 Degree Crackers but the did compliment the pizza, yogurt sticks, raisins and fruit the guys had for lunch.

Pancakes & Chokecherry Syrup

Everyone knows how to make pancakes from a box.  Read, measure, pour, stir, pour, cook, flip, put on plate and eat.  I think Lillabee’s Pancake Mix and Colorado Cherry Company’s Chokecherry Syrup will be going to the prom together this year.  What a happy couple.

Bison and Pork Burger - So happy together!
Let’s say half and half is about perfect.  Bear Mtn. Ground Bison and Ground Pork from John Long, the John Long.  Shape into a nice fat patty and grill.
Bed it down with a little bibb lettuce on a Vicenza’s ciabatta and top with a couple ribbons of Beehive Cheese Co’s Apple Walnut Smoked Promontory.
Is there a better dinner at 10:45 at night.

Grilled Bison & Quinoa w Asparagus & Tomatoes - Lunch Time!
The upside to preparing 95% of your meals at home is that there are always leftovers in the fridge and GOOD leftovers if you are cooking from the market.
You can only really appreciate that is harvested in CO and new products that are available here when it is all you got to eat!  I am still going to eat at other peoples houses and occasionally dining out but I am not going to seek dining out these days.  That being said I did pass up some amazing looking Frosted Flakes and cinnamon encrusted french toast with strawberries and bananas at Bob’s on Main St in Downtown Louisville, CO today.  On to lunch….
3 oz of Bison NY Strip - Bear Mtn Bison
Quinoa with Goat Chevre from Laz Ewe
Organic asparagus from Kiowa Valley w a little Balsamic
Tomatoes with Basil thanks to MMlocal
Won big points with the kiddo for packing him a cupcake from last night.  I a guessing the delicate homemade whipped cream didn’t survive too well in the Star Wars lunchbox.  It was the thought…
